these gems were discovered while attending a whole foods market storytime and crafts class with zeke a few months back. the snacks were for the kids but at the time i was very pregnant and starving so we shared a few. man, was i surprised at how good they were! these healthy bites are perfect for satisfying any sweet tooth. i’ve made these nearly a dozen times and they haven’t gotten old. they’re easy to make and are good for up to 5 days in the fridge in an airtight container. but truthfully, they’ve never lasted that long!

ingredients:

1 1/4 cup rolled oats
1 1/4 dried currants (i used raisins)
1/2 cup unsweetened peanut butter
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon

add all ingredients in a food processor. i used a blender and it worked just fine. mix until everything is smooth and sticking together. then drizzle 2-3 tablespoons of hot water in food processor until the mixture turns into a ball. if using a blender, transfer the mixture into a bowl and drizzle the hot water sparingly while using your hands to roll it into a ball. using an ice cream scoop, scoop out a small portion of the mixture. roll into a ball, pressing firmly so that it sticks together. chill bites until ready to serve. enjoy!
